Many years ago I was restoring an Elite, and it looks as if I still have a pair of SU carbs that I am now restoring.

What I would like to find is ideally the detailed parts from the official parts book, and also some pictures showing the jet lifting / choke levers.

Can anyone help please?

Would be well worth looking on some of the triumph forums - even rimmers website might help as that shows you an exploded parts diagram

Can’t help with this, but I was just reading about an Austin Healey 3000 restoration in Classic Cars magazine and the restorer reckons that most people drive cars with SU carburettors without even knowing that they need engine oil in the dashpots. That results in bad running. I knew this when I was a teenager. It’s a two minute job to top them up.

Do not ever put engine oil in the dash pots. It should be thin as piss oil in there - 3in1 is good. 10w40 is bloody dire and you will notice for sure.

As Barry says 3in1 or SU oil is readily available, SU carbs are easy to rebuild and if you buy a genuine kit (H4 I assume) you get an exploded diagram and instructions.
