Totally freaked me out. I read the whole think 4 times and only counted 3 F' each FFFing time. Weird!

Don't worry, the test's author states that the vast majority only 'see' 3

I suspect that most of us unwittingly read the text before counting the F's. As Robin suggests above, the brain must then associate the word 'of' with a 'v' sound, hence its subsequent refusal to recognise 3 of the 6 F's.
